For the geeks: Natural sundried, also called “natural process” or “dry process,” means drying coffee cherries whole without the intervention of water or machines to remove any of the fruit.

Due to the extended contact time between the seed and flesh during drying, loads of those natural fruit flavors infuse into the coffee. You can get boozy notes like liqueur where the sugars have fermented and the alcohol flavor remains.
